Carrot Cake My daughter Kenzie's way

350 degree  35-45 mins

1 cup sugar
1 cup butter or oil
3 eggs
2 cups grated carrot
2 1/2 cup flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp nutmeg


cream oil/butter and sugar
Beat in eggs
add vanilla
add baking powder,soda,cinnamon,nutmeg
cream together
add flour mix well
add carrots
mix well
I line my pan with parchment paper

option 1/2 cup chopped nuts/raisins

pour batter into pan
bake 35-45 mins

cream cheese frosting

4 oz soft cream cheese
1/4 cup butter  room temp
2 cup icing sugar
1/2 tsp vanilla
1 tbsp milk or cream if needed

cream the cheese
add butter
add icing sugar and vanilla
 chill until ready to frost the cake or cupcakes
