I am a very busy mom of 4 and a grandmother of 4. I work outside the home and involved with my children's sports teams and community events which takes up a lot of my time.
It is very important make healthy,well balanced meals for my family in as little time as possible.
Kids are picky and don't like to eat certain things so I hide all the good stuff in great tasting food.

Citrus salsa
2 oranges segmented cut in half
12 cherry tomatoes cut in half
1 green onion minced
1/2 a jalapeño minced
1/2 lemon juiced
Salt
Pepper
Mixed together, let flavors marry for a few hours.
So good in a bed if greens,fish,chicken burgers
